We interviewed Alex Clark, VP of Finance at The Big Biscuit, who shared insight into the company’s transition from manual cash tip payouts to digital tip management, the operational challenges they faced with their previous process, and how TipHaus helped improve efficiency, transparency, and the employee experience across their growing restaurant group.

As The Big Biscuit continued to grow, its manual tip management process became increasingly time-consuming for managers and the finance team. Managers were responsible for manually calculating tip distributions, managing cash payouts, entering tip information into payroll systems, and resolving discrepancies.


The process required significant administrative time each week and created challenges around accuracy, reporting, and compliance. The finance team needed greater confidence that tips were being allocated correctly among employees, including bussers and runners, while also reducing the risk of payroll errors caused by manual data entry.


Before implementing TipHaus, The Big Biscuit spent approximately 4.5 hours per store each week managing tip calculations and distributions, along with additional time spent by district managers handling cash runs to replenish safe cash.
